Easy Home Cookin'

Lately I have been on a fresh veggie kick- which is great! But at the same time, while eating my spinach salad and red pepper for lunch today, I was completely craving something homemade.

You know me, when a craving hits I have to feed it. So, after a quick trip to the store, I rolled up my sleeves and got cooking.

Yum!
First I grabbed a large pot and sprayed it with non-stick spray.

Then I placed a layer of grilled chicken on the bottom.

Followed by 6 cut up carrots, 7 chopped potatoes, and 2 sliced onions.

I threw in some peas, Parmesan cheese and garlic powder for good measure.

I also had some fresh garlic and peppers on hand, but after all of my other chopping I decided against using them (not a wise decision).

*Add whatever else you like, veggies, seasoning, etc. (there is so much you can do with this)

Once it was all in the pot I topped it with cream of chicken soup, some water, and a dash of salt and pepper.

Then let it boil for 30-40 minutes until the veggies are soft.

Add salt and pepper to your liking.
